make your own pesto; green pesto that is also low in carbohydrates

Making your own pesto is a breeze. You only need a few ingredients and you only have to stand in the kitchen for a while. Do not make too much pesto at once, because you can store the homemade pesto in a closed jar for about a week.

Make your own pesto, the green variant

Do you want to vary with making your own pesto? Totally fine. Just make sure that you don't use too many pine nuts, as you might not be on a low-carb diet anymore.

Ingredients for a small jar of homemade green pesto:

  • 20 grams basil leaves (about 1 plant)
  • 20 grams of pine nuts
  • 1 clove of garlic
  • 50 ml olive oil
  • 20 grams of Parmesan cheese
  • little salt

Make your own pesto, preparation method

To make the pesto you need a mortar, stick blender or food processor. I personally find the immersion blender and/or food processor the most convenient.

First toast the pine nuts to release extra flavour. Squeeze the garlic clove. Then put all the ingredients together in the bowl and let the food processor or the immersion blender do the work to make your own pesto. Make sure it becomes a nice smooth mass.

What can you use the homemade pesto for?

I love pesto, so as far as I'm concerned you can quickly use the homemade pesto with something. My favorite dishes that this pesto goes well with:

Zucchini spaghetti

Pasta with salmon and zucchini

Do you prefer red sauce instead of green pesto? Then I would like to recommend the recipe below. So tasty!
